Shinji by Kanesaka

Driven by a desire to preserve and share the heritage of his native cuisine, Japanese chef Shinji Kanesaka brings a flavour of his original Edo-style sushi restaurant in Tokyo’s Ginza district to Shinji by Kanesaka, an intimate restaurant tucked away on the ground floor of Singapore’s Carlton hotel. The dining room, designed by Junzo Irikado (who was also behind the serene interiors of the original Ginza Sushi Kanesaka), features a 16-seater counter carved from the trunk of a centuries-old hinoki tree, alongside furnishings made out of natural materials that echo the same classic simplicity evident in Kanesaka’s technique. An omakase menu is skillfully prepared and served by the talented Japanese team, each of whom has served a mentorship of at least 15 years and who are happy to talk diners through each course, from the smoked sashimi to the marinated fish dishes and the ridiculously good rice. A second outpost can be found in Singapore’s St Regis hotel.
