Sult is effortlessly cool, from its stripped-back industrial-style dining room and gleaming open kitchen to the choice of natural wines and unpretentious Italian menu. Overseen by chef Julia Lottus, this chic bolthole is happily tucked away from Rio's more touristy districts, offering inventive takes on Italian staples, such as mushrooms with cacio e pepe sauce or spaghetti vongole amped up with locally grown chives and punchy bottarga, and fresh cavatelli topped with crab and green pepper pickles. The vegetarian options aren't left on the sidelines either, such as the ricotta and spinach-stuffed rondelli, steeped in a rich pomodoro sauce. The concept has worked a treat: in 2024, executive chef Nelson Soares took the magic across the Atlantic, opening a second outpost in Cascais, Portugal.
